Strawberry summer cake

I’m trying to use up the things we have in our deep freezer before the harvest season gets too much in full swing so I can defrost it. So I made Strawberry Summer Cake from Smitten Kitchen. I’ve made it before and it’s so good. Mine never turns out as pretty as Smitten Kitchen’s (I think because I’m using thawed strawberries instead of fresh), but it tastes just as good. You can dust some powdered sugar on top for extra sweetness, but it’s also good as is. I’ve also eaten it with whipped cream on top. Mmm!

One of my favorite recipes. Go get yourself some strawberries this spring and make this! We’ll be going to pick some fresh strawberries within the next couple of weeks.
