Blueberry Delightful

We had a dessert contest at my day job today and so I brought in Blueberry Delight, which is a holiday tradition in my family. My aunt makes it every Thanksgiving and Christmas and it is SO good. It’s got blueberries, graham crackers, Cool Whip, and French vanilla pudding. Plus it’s really easy to make because there’s no cooking. Just mixing and layering and pouring. So easy, even I can do it!

I made an extra one last night because The Husband loves Blueberry Delight, so I had to make enough for him to have some too. I asked him after he ate some of it if he thought it could win a dessert contest.

Him: Let’s put it this way–if I had to choose between your Blueberry Delight and my former neighbor Mrs. Whitfield’s chocolate cake, you would so lose.

Me: What?? How is that supposed to make me feel confident about my chances??

Him: You don’t understand. Her cake was the best thing EVER. In the entire universe.

Me: (rolling eyes) Okay, but Mrs. Whitfield doesn’t work at [the newspaper]. So if you had to choose between this and other cakes and pies and cookies that weren’t made by Mrs. Whitfield, do you think this would win?

Him: Oh, yeah, just as long as no one else there has Mrs. Whitfield’s cake recipe.

Well, I didn’t win first place…but I won third! And everyone kept telling me how good it was. Which is nice, considering I’m not a cook at all (and have absolutely no desire in ever becoming a good cook) so I rarely get compliments on food I make.

      It was a strawberry shortcake cake, that was really good! It was cake with real strawberries mixed into the batter, then baked, and covered with a Cool Whip frosting, and then a few strawberries on top.
